The speedy specialists in eggy things between bread are now slinging sandwiches from a corner shopfront on Sydney Road,Brunswick,as well as the original in Fitzroy.
Layering fried or scrambled eggs with hash browns,bacon,caramelised onion,cheddar and more is the Egglab MO – they've been perfecting it since 2017,when co-owner Greg Papas and his team decided there wasn't a quality option between cafe breakfasts and fast food in the morning.
"We're popping out food within two or three minutes,"says Papas."People know that about us:they can get a made-to-order,good,fast and fresh breakfast."

Like Fitzroy,it offers a menu of mostly egg-based sandwiches (if you've visited LA's Eggslut,you'll see the similarities),plus a handful of burgers for lunch,sides such as waffle fries,Allpress coffee,freshly squeezed OJ and shakes.
Buns are a top-secret riff on brioche that's lighter and less sweet,while eggs,beef and chicken are free-range and Victorian.
