Industry Beans' Chadstone menu includes 12-hour cured kingfish with seaweed crisp and compressed papaya.Jake RodenIndustry Beans owners Trevor and Steve Simmons have opened a 100-seat cafe and coffee roastery at Chadstone Shopping Centre,while announcing that their 10-year-old Fitzroy cafe will move up the road to 70-76 Westgarth Street,Fitzroy,in mid-June.
The new Chadstone branch opened on April 15 and is their third combined cafe and roastery (there's another in Brisbane). The brothers also have cafes in Melbourne,Brisbane and Sydney.
Designed by architects March Studio,Industry Beans Chadstone is housed in a glass box attached to the main shopping centre at the Tiffany and Co entrance. It's open daily and,unlike Fitzroy,offers dinner from Thursday to Saturday,and booze.
You might recognise all-day brunch signatures,but the menu also includes prettily plated new dishes such as tea-dusted sous vide salmon in a"garden"of native succulents,purple congo potato,edible sand,Yarra Valley caviar and wakame foam;and coffee-rubbed quail with cured egg yolk,mango togarashi and kohlrabi.
It also pours local beers,Australian and European wines and signature cocktails such as the IB Espresso Martini and cold brew negroni.
Customers can park themselves on a bench and chat to the Chadstone roasting team while they work.

Work on the new Fitzroy HQ build has begun,with March Studio keeping the warehouse's sawtooth-roof and maximising natural light. Expect more seating and a larger retail area and roastery when the new Fitzroy space opens in June.
