1. Heat oven to 200C. To make the glaze,combine all glaze ingredients in a pan and bring to the boil,stirring until smooth. Set aside.
2. Soak the bread in the milk for 10 minutes,then squeeze dry and finely chop. Pan-fry the spinach in a dry pan over medium heat until wilted. Squeeze out excess liquid and roughly chop.
3. In a large bowl,mix the beef,pork or sausage meat,bacon,onion,bread,spinach,tomato paste,beaten egg,oregano,paprika and sea salt and pepper,kneading with your hands until well combined.
4. Form the mixture into a loaf shape and place on a baking tray lined with baking paper. Coat with half the glaze and bake for 45 minutes,then coat with remaining glaze and bake for a further 20 minutes or until cooked through.
5. Cut into thick,hearty slices and serve with mashed potato,rice or beans.
