This is an excellent recipe from food stylist Caroline Velik,who makes it as a refreshing treat on really hot days.

Ingredients

  • 2 whole lemons,sliced

  • 1 handful ginger,peeled and sliced

  • 3 heaped tbsp brown sugar

  • 2L boiling water

  • 2 sprigs of mint,to serve

Method

  1. Place lemons,ginger and sugar in a large heatproof jug. Pour over the boiling water.

    Allow to cool to room temperature while the flavours infuse. Add extra sugar to taste if necessary,then refrigerate until cold.

    To serve:Put plenty of ice and a few mint leaves in each glass and serve.
