Just like stir-fries,salads don't need to combine 20 different ingredients to taste good. Quite the contrary,a few ingredients seasoned well are all you need for a delicious,distinctive salad.
3 cups mixed tomatoes (cherry,heirloom etc),halved or cut into wedges
2 avocados,peeled and cut into large cubes
1 coriander plant,roughly chopped
1 bird's-eye chilli,finely sliced
¼ red onion,finely sliced
1 tbsp red wine vinegar
¼ tsp caster sugar
2 tbsp olive oil
1. Combine all the ingredients in a bowl and season very generously with salt and black pepper. Gently toss the ingredients together and serve immediately.
