As you’d expect from a hotel restaurant in a wing of grand Werribee Mansion,Joseph’s is properly dressed:white linen,heavy cutlery and sparkling stemware. Dining by day,there’s a sweeping garden view and short set-course menu of precise classics:plump grill-branded prawns;salmon fillet with smoky highlights of pancetta and truffle oil. Dinner loses the view,but gains a la carte.
