Guacamole can be as simple as avocado,lime and salt,but a tiny bit of effort can deliver something rather more exciting.
2 avocados
2 tbsp lime juice
2 tbsp finely shredded coriander
1 tbsp finely chopped red onion
¼ cup pickled jalapenos,roughly chopped
1 roma tomato,seeds and pulp removed and flesh finely chopped
freshly ground black pepper,to serve
Halve the avocados,remove the seed and scoop the flesh into a bowl. Add the lime juice and ¼ teaspoon of salt and mash together with a fork to form a chunky salsa. Stir through the coriander,red onion,jalapenos and tomato and finish with a littlefreshly ground black pepper.
