Opportunities for indulgence are many,whether on the $170 degustation or the a la carte menu. Spanner crab presented in the shell gets a buttery,salty hit from sea urchin and glistening baubles of fish roe. Pan-seared John dory luxuriates in a delicate beurre blanc dotted with caviar.
Vacherin,a signature,is a pastel-hued tower of meringue,sorbet and cream topped with gold leaf. Polished service and an impressive wine list – including whole pages of chablis,chardonnay,pinot noir and shiraz – mark Audrey’s as a jewel in Sorrento’s crown.
