After the success of its four deli outposts across the city,Hector’s has ventured from sandwiches to baked goods at its very first designated bakery. You’ll still find your favourite deli sangers here, but for his inaugural bakery, founder Dom Wilton also brought on baker Aram Yun (ex-Bloomwood) to develop a bespoke viennoiserie offering.

This includes a core range of laminated pastries such as twice-baked spiraled almond croissants shaped into mountainous cubes, plus cinnamon scrolls painted with lashings of cream cheese frosting that have fast become a crowd favourite. There’s even a pastry version of the sell-out cheese and mushroom toastie.

“Sandwiches, coffee, baked things – these are daily rituals for many,” says Wilton. “I love that something so simple can bring so much joy. It allows for a deep level of human connection.”
