This simple,chopped side salad works with all kinds of meals,but it's brilliant with a barbecue.
1 cucumber,peeled at intervals and diced
½ red onion,thinly sliced
2 tomatoes,diced
½ red capsicum,diced
1 tbsp lemon juice
2 tbsp olive oil
1 tbsp finely shredded parsley
¼ tsp sumac (optional)
1. Combine the cucumber,onion,tomato and capsicum in a bowl and toss with the lemon juice,olive oil,parsley and sumac (if using). Season with salt just before serving.
